STEP 1 | SAUTÉ

Peel, de-seed and, grate the pumpkin. Furthermore, heat desi ghee in a thick bottom casserole pan and sauté ginger, garlic, green chillies, cumin seeds and all the spices.

STEP 2 | PREPARE THE MIXTURE

Add the pumpkin. Cook it for 20 minutes till the pumpkin is entirely cooked and the water has dried out. Furthermore, add the chopped almonds and cook for another 6 minutes. Let the mixture cool down. Cut them into rough, thin patties of 30 grams each. Lastly, coat them with slivered almonds.

STEP 3 | FINALIZE THE MIXTURE

Heat desi ghee in a medium-hot pan and place the patties in.

STEP 4 | FRY & SERVE

Cook till the bottom caramelizes and then carefully turn the patties. Lastly, cook the patties till they are crisp from outside. Serve almond pumpkin kebab patties hot and enjoy.
