STEP 1 | WHISK

Butter and flour loaf pan. Whisk the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon in a bowl.

STEP 2 | BATTER

Combine sugar and jaggery with eggs, oil, cream, ginger, and vanilla extract, and beat at medium speed until smooth. Beat in dry ingredients and carrot at low speed.

STEP 3 | BAKE

Scrape the batter into the pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the centre comes out clean. 

STEP 4 | COOL

Let it cool for 10 minutes before removing it from the pans.
