STEP 1 | PREPARE THE MIXTURE

Preheat oven to 170°C. Grease a loaf pan. In a large bowl, mix well together flour, baking soda, baking powder and salt. Set aside.

STEP 2 | FINALIZE THE MIXTURE

In another large bowl, whisk together eggs, granulated sugar and honey. Slowly add the oil and vanilla extract and mix until combined. Add the flour mixture in small portions, add coffee and mix till the mixture is all blended properly.

STEP 3 | BAKE

Pour the mixture into the loaf pan. Top with nuts. Bake for 35-45 minutes or until the centre comes out clean, insert a toothpick to check.

STEP 4 | SERVE

Let the cake cool. Serve at room temperature along with some vanilla ice cream and honey (if desired).
