STEP 1 | VEGGIES
On a pan, add chopped veggies such as tomatoes, bell peppers, broccoli, zucchini and other vegetables of your choice. Drizzle some salt, pepper, chopped garlic. Saute the veggies until slightly soft and burned.
STEP 2 | PASTA
Cook rotini pasta in a large bowl. Add some salt water to the rotini pasta and let it boil. Cook the pasta for around 9-10 minutes. Keep the pasta water on the side.
STEP 3 | SAUCE
To the pasta add grated cheddar and parmesan cheese and marinara sauce. Depending on how cheesy you want the pasta to be, add the cheese to the pasta pan. Furthermore, add the pasta water and cook the mixture. Cook until the desired consistency.
STEP 4 | MIX AND SERVE
Top off the rotini pasta with oregano. Serve the sautéed veggies on the side. Moreover, you can also grate some fresh parmesan cheese for that extra cheesy flavour. Enjoy.
