STEP 1 | PAR-BLANCH

For the Lentil Quinoa Salad, add salt to boiling water and par-blanch the vegetables for around 50 seconds. Furthermore, shift them in a bowl with ice water. Also, add soaked quinoa to a bowl.

STEP 2 | PREPARE THE MIXTURE

Add lentils and pomegranate seeds. Also, add chopped spring onion and coriander and mix them well. Furthermore, take the blanched vegetables and add them to the lentil and quinoa mix.

STEP 3 | FINALIZE THE MIXTURE

For the dressing: Take the fresh mosambi juice and then add mustard, lemongrass, and chopped green chilli. In addition, use some basil leaves and add some olive oil to them. Furthermore, mix it well with the salad.

STEP 4 | SERVE

Lastly, plate up the salad and garnish. Above all, enjoy the delicious yet healthy salad with your friends and family.
