STEP 1 | PREHEAT

For roasted spinach quesadilla, preheat oven to 205°C. Line a large baking sheet with foil. Toss cauliflower with oil, coriander and, cumin on a prepared sheet. Spread in a single layer. Bake in the centre of the oven, stirring halfway through until edges are golden.

STEP 2 | PREPARE THE MIXTURE

Heat a large non-stick frying pan over medium. Spray with oil. Lay 1 tortilla in the pan. Toss cheeses together in a small bowl. Scatter 3 tbsp cheese mixture, 1/4 portion cauliflower, some spinach and 3 tbsp more cheese mixture over half of the tortilla. Fold tortilla to enclose filling. Cook until the underside is golden, about 3 minutes.

STEP 3 | FINALIZE THE MIXTURE

Flip and cook another side until golden, 3 minutes more. Repeat with remaining tortillas and ingredients.

STEP 4 | SERVE

Cut quesadillas into wedges and pair them with salsa if desired. Serve the delicious roasted spinach quesadilla and enjoy.
